Today was day one, as you can tell. I am currently battling some absurdly itchy dry eye issue in my left eye which is making me super grumpy. Oh, and we drove all over this holiday weekend so we are pooped! So, I kind of think how I feel today doesn't really count. It's day 1, a weekend, low stress, etc.
My husband and I went to Whole Foods mid-afternoon and I dropped $100 worth (which barely filled two paper bags, ugh) on cleanse appropriate foods. I even bought some lamb leg - I know, so heartbreaking! But I feel like I will go crazy without some kind of hearty meat - I can only eat so much chicken and salmon. When we got home it took me about two hours to prepare all the food:
- Local lacinato kale (which I chopped to prep for salads for the week)
- One pound of wild Alaskan King Salmon (I roasted this in the oven at 400 degrees for about 25min, after it had been topped with whole grain French mustard/coconut oil/chopped fresh dill and tarragon/turmeric/tahini topping)
- Four chicken breasts (I made two using red curry paste/lime juice/coconut oil, and the other two using coconut oil/fresh turmeric/chopped fresh basil and tarragon/s&p/granulated garlic)
- A homemade lemon vinaigrette (one finely chopped clove of garlic/extra virgin olive oil/juice of one lemon/dried tarragon/local honey with a hint of elderflower/whole grain French mustard)
I think this cleanse will definitely take some getting used to, mostly because in the morning I can only have two shakes that are mixed with water. It's good I'll be drinking water, but this morning I had to have a handful of pistachios because I was still hungry. I won't lie, I'm hoping I'll lose a few pounds and maybe my skin will clear up a bit or brighten up. I am nervous though given my gym routine has gotten to be pretty active!
Tonight's dinner plan: spiralized zucchini, one piece of salmon, a little EVOO, and maybe some slivered almonds for crunch.
