This morning I went to my usual 6:30am yoga class. I honestly, all week, always look forward to that class, and today's playlist that the instructor put together was especially good. After the class I walked home and made my first shake of the day with some cashew milk. I WFH on Fridays, so I was able to prepare my lunch at lunchtime versus having to plan ahead. I made a salad, totally forgot to add my delicious vinegar-y beets, but made it with lacinato kale, arugula, shredded carrots, great northern beans, olives, dressed with a little pepper, a dash of turmeric, EVOO and balsamic vinegar. I also had a piece of salmon on the side but to be honest, I'm kind of tired of salmon and thinking I might end up tossing the last two pieces from the filet. Ugh I know, I hate being wasteful too!
