I've still been trying to create delicious healthy meals, and last night I made a really great pesto for my very dear friend Zoe, and of course for me and Tim. I love making pestos and love getting a bit more creative with them. Last night's pesto was made with:
- a small handful of raw cashews
- a small handful of raw walnuts
- a tbsp of tahini
- the zest of half a lime plus...
- the juice of one lime
- lots of EVOO
- an avocado
- a handful of basil
- a handful of arugula
- two cloves or raw garlic
- a small tsp of coconut oil (optional)
- s&p (I prefer quite a bit of pepper)
I served it over raw spiralized zucchini and it was really yummy! Since I've started eating less dairy in my diet, I am trying to use healthier substitutes to make things creamy - the avocado does the trick! It's a bit thicker than most pestos you'll find pre-made in the grocery store, but you could always add some water to thin it out. I recommend smooshing the pesto all throughout the noodles so everything get's coated evenly. Yum!
