Earlier today I went to Whole Foods and purchased some of my green light foods for the cleanse - this included some salmon and free-range/organic chicken. After scouring Pinterest for some inspiration, I decided to make grilled chicken breasts and thighs in a bit of a different and daring sauce (well, daring for me!).
- Juice from half a lemon
- Some EVOO
- Tahini
- Salt & pepper
- A healthy dash of tumeric
- Smoked paprika
- Granulated garlic
- Chopped fresh tarragon, sage, and thyme
My husband isn't a fan of chicken thighs, which I cannot for the life of me figure out, but I devoured mine over spiralized zucchini and carrots with some raw arugula. I made a quick lemon vinaigrette the other day which I used to dress the dish:
Lemon vinaigrette:
- Juice from half a lemon
- EVOO
- Unfiltered apple cider vinegar
- A pinch of salt
- Pepper
- A teaspoon of whole grain English mustard
This is also a delicious dressing for green salads, and can be easily tszujed up with anything on hand, such as pomegranate juice, a bit of agave to cut the bitterness, etc.
Check back to the blog soon, lots of stuff is coming up! I'll be blogging a play-by-play-day-by-day of my cleanse progress, which is sure to be entertaining. I'm sure my dairy withdrawals will kick in swiftly. I'll also try to post before and after photos - as long as I don't feel too self-conscious!
And, as if you honestly didn't know by now...I'm going to Wanderlust on Saturday! I'll do my best to take photos and write a super hippie post when I get back!
xx
