Today was the first day I worked from home, and also the first day I worked out at the gym. I ate a few almonds after I woke up, just to avoid passing out mid-hammer curl.
I was busy again with work today, so I totally didn't make my lunch until after 1:30pm. Lunch was delicious, and I cooked quinoa for the first time in ages. I made a light dressing using olive oil, apple cider vinegar, turmeric, garlic, cumin, and pepper. Then I mixed in some white great northern beans, kalamata olives, those balsamic/thyme sautéed shiitake mushrooms, and a piece of grilled cauliflower from the other day. It was delicious and a nice alternative to a salad.
I also baked some apple chips using a green apple that I sliced into medium rounds using my mandolin. I topped them with a little cinnamon, and although I definitely cooked them too long it still tasted really good!
Side note, as I was writing this post, my lovely coworker/cubemate texted me that she ate a homemade burger for dinner...and I didn't have cravings until I started thinking about a soft potato bun...and then that Shake Shack burger...but then I forgot about it since I was doing other things! Thus, I guess I will have some cravings.
Off to marinate the lamb, I didn't really feel like cooking it today...hopefully it's still good so that I can grill it tomorrow? Wellp, we'll see.
