I'M AN INSPIRALIZED AMBASSADOR! This is kind of the most amazing thing ever. You all know I've been spiralizing for about a year and a half now and I don't know how I ever lived without this incredibly little kitchen gadget. It's seriously improved my quality of life and my health; I've been able to maintain a healthy weight, I nourish my body with significantly more vegetables (than I did when I was vegan!), and I honestly don't miss pasta (this coming from a gal who's part Italian!).

My chronic inflammation stays at bay (I have arthritis) and I find myself making healthier choices overall. Honestly, I've tried other spiralizers and they were pretty poor quality - the plastic would break apart, or it would waste too much of the item I was spiralizing through too wide of a core/hole. It also produces way less 'waste' than other brands (I tend to use the core bit and the end as well versus tossing since they're both slim enough). I had seen on various wellness sites like Inspiralized and Well+Good recipes for spiralized sweet potato and egg dish, so I decided to throw together a dish for my husband and I for an easy weeknight dinner. It's messy, unkempt, but colorful and oh so tasty! I was just mentioning to some friends last night, I love cooking because I can play around and not follow a recipe exactly. With this meal, I decided to check out a few recipes and then take a look in my fridge and pantry to see what I had on hand to cook with. I had already meal prepped for the week, so I had some roasted spiralized sweet potato ready to go. I also had some roasted/spiralized red onion, lacinato kale that I had already washed and chopped, shiitake mushrooms that had been roasted; I also had garlic, a package of pre-chopped pancetta, sriracha, and some spices...so I decided to toss something together without much of an idea on how it would come out. Now, I'm sorry to tell you I can't really give you an exact recipe, but trust your gut. Get playful in the kitchen! Don't be afraid to get messy. In a sauté pan over medium heat, cook and brown the pancetta. Once browned, drain it onto a paper towel. Pour off most of the fat (which you won't use in this recipe) and then toss the kale in to sauté. Once it becomes a vibrant green, add your garlic and gently cook. Then add in your shiitake mushrooms, spiralized onion, and spiralized sweet potato, toss in some cumin powder, powdered ginger, turmeric powder, and a dash of Worcestershire sauce and mix it all up so that it gets evenly distributed. Next you'll want to create little nests or nooks where you'll crack your egg into. Make sure you can see some of the pan through the bottom of the nests. Add a bit of salt and pepper (I prefer Himalayan pink salt myself). Note that I found it helpful to make two separated nests so it would be easier to flip. Once you add the eggs, don't touch! Let the whites settle a bit - it's best to cover the sauté pan so that steam cooks the eggs through. Once they appear to be more solidified and opaque, flip your nests. Don't worry if it doesn't all stay together, that's to be expected - the main thing is that you flip your egg so it can cook more evenly and not be so raw on top, so it only needs a minute or so. And don't worry if it's burned a little - this only adds flavor! Once it's done, flip it so the original side is face-up on the plate and top with some of your pancetta and a squiggle of deliciously sweet spicy Sriracha. Feel free to add or not include anything from this recipe, make it your own! Don't be afraid to mess around in the kitchen, but remember that less is more, start with smaller amounts of additions versus tossing in massive amounts. The fact that you made it, that you created it, will make it taste that much better! Bon appetit!
- S Hello! Yes, I am alive! Apologies for the extended hiatus, I took some time in between jobs and am now settling into my new one. I've been quite busy and also kind of avoiding technology when I can, since I had been on the computer a lot at my old job, and also on the computer for most of the day at my new/current job. I hope to get back into my groove soon, I have some ideas for posts that have been brewing for a few weeks now. Since my new job is back to my roots, so to speak (I'm a therapist again, woooo!), I definitely think Wellness Wednesdays will start to gain momentum again! I'm also open, as always, to any ideas and suggestions from my readers. Before I end this post, let me share a quick recipe. The past few weeks my diet has been, well, pretty poor. Ugly poor? Whatever, either way, it has not been the healthiest. I'm planning to do a bit of a cleanse soon, a riff off of that cleanse I did back in July. With the holidays coming up I want to continue on the healthy path versus cave in to sugar and dairy - that fleeting pleasure one gets after consuming those foods just isn't worth it anymore, with all of the side effects it comes along with. So that recipe...Last night, after a not so successful day of eating healthy (I had the day off and no lie, I watched 10 episodes of The Originals), I made a delicious simple spiralized dinner: one zucchini (spiralized on blade C), leftover roasted shiitake mushrooms, lacinato kale, quartered kalamata olives, sauteed that up gently over medium-high heat, in EVOO, for about 3 minutes or so, and then tossed it with a tahini vinaigrette that I made using tahini, apple cider vinegar, turmeric, ground ginger, one garlic clove minced, some water, s&p. I also topped the dish off with some nooch. It's dishes like this that make me think, why don't I cook more often?! It took less than 10 minutes total to prepare the dish! Spiralizing, man, it's amazing. Anyway, looking forward to talking soon!
